Introduction

Ingredients

    8 oz fresh mushrooms, sliced
    1 small/medium onion, sliced
    1 1/2 cups frozen or fresh bell pepper strips (mixed colors)
    1 cup fresh baby spinach
    water, as needed (very small amount)
    1/2 tsp salt, or to taste
    garlic powder, black pepper, paprika, ground cumin, and chili powder to taste

Directions

Without oil, sauté all veggies together, adding spinach only when the other veggies are almost cooked. Add a bit of water, as needed, to keep veggies from sticking to pan.

Use this cooked mixture to stuff fajitas, burritos, enchiladas or to use in any other Tex-Mex dishes. (You can also use this alone as a veggie side or serve over rice).
Make roughly 5 half-cup servings.
