Number of Servings: 4


    1 pound ground turkey or beef
    1/2 red bell pepper - chopped
    1 cup cheddar cheese - lowfat
    1 package of taco seasoning
    sour cream
    1 Tbs of extra light olive oil
    Whole wheat tortillas


Brown the meat. Drain. Add chopped pepper and taco seasoning. Return to heat and cook for 5 minutes on low. In a separate skillet, heat olive oil. Put seasoned meat and 2 Tbs of cheddar cheese into a tortilla. Tuck in the ends and roll up. Put in skillet and sear on one side until brown. Then sear on the other side. Top with salsa and sour cream! ENJOY!!
