    2 tablespoons all-purpose flour
    1/2 teaspoon salt
    1/3 teaspoon pepper
    4 boneless skinless chicken breasts (5 oz each)
    1 (14 1/2 oz) can diced tomatoes with basil, oregano and garlic
    1 (13 3/4 oz) can artichoke hearts, sliced
    1/4 cup balsamic vinegar
    1 tablespoon extra virgin olive oil
    1/2 cup reduced fat mozzarella cheese


Mix flour, salt and pepper in a large plastic ziplock bag. Add chicken breasts to bag, close, and shake to coat chicken evenly.
Heat 1 tablespoon extra virgin olive oil in large nonstick skillet over medium heat. Add chicken and cook until cooked through, about 8 minutes.
Remove to an oven-safe plate, cover and keep warm.
In the same skillet, bring the diced tomatoes, artichoke hearts, and balsamic vinegar to a simmer. Cook until heated through, about 5 minutes.
Spoon the tomato mixture over the chicken and sprinkle with mozzarella. Put under the broiler for a few minutes to melt the cheese.
