    1 tomato
    1/2 cup ground beef
    1/4 cup low fat shredded cheese
    shredded lettuce
    diced onions
    mustard (as desired)


cut tomato in half and scoop out the seeds.

drizzle a little mustard in the bottom of each half.

cook beef. immediately mix with the cheese until cheese is melted.

fill the tomato halves evenly with the meat & cheese mix.

top with lettuce and onions.

(for a variation, mix the lettuce and onions in with the cheese and meat.)
