This healthy pizza dish can be topped with any number of your favorite toppings. This healthy pizza dish can be topped with any number of your favorite toppings.

    4 c. grated zucchini
    2 c. mozzerella cheese, divided
    2 eggs, slightly beaten


    1- 14 oz. jar pizza sauce
    4 oz. ground turkey
    1/4 c. parmesan cheese
    1/2 c. olives
    1 c. sliced mushrooms, canned


Drain and squeeze moisture from zucchini. Mix with 1 c. grated mozzerella cheese and both eggs.

Press into pizza pan sprayed with cooking spray. Bake at 400 for 10 minutes.

Spread pizza sauce over hot crust. Top as desired. Sprinkle remaining mozz. cheese over top. Bake at 400 for 30 minutes

Makes 6 servings.

  • Used bigger pizza pan so did 6 cups of grated zucchini and 3 eggs. Baked crust at 400 for 15 min. Removed crust and coated with olive oil and bacon grease, moved oven rack up and broiled for 15 minutes till browing occured. Topped with onions, peppers, spinach, avocodo, bacon and garlic sausage. - 1/31/17
