    1 lb lean ground beef
    1/2 onion, chopped
    2 cloves garlic, minced
    1/2 yellow bell pepper, chopped
    1 c beef broth
    1 T dijon mustard
    1 T reduced fat sour cream
    1 T cornstarch
    Salt & pepper, to taste
    12 oz. egg noodles, cooked & drained


Cook noodles and drain.

In the meantime, brown the ground beef with the onion and bell pepper. When the veggies are beginning to turn translucent, add the minced garlic. While the ground beef is cooking, whisk together the broth, mustard, sour cream & cornstarch.

After ground beef is completely cooked, drain excess fat if needed. Add the broth mixture. Bring to a boil, then reduce heat and simmer on low until thick. Add salt and pepper to taste.

Stir in the drained noodles.

Makes 8 1-cup servings.
