Introduction
This recipe is from "Clueless in the Kitchen" by Evelyn Raab. I made it with ground pork, but ground beef is great, too. Either way, this chili is delicious, easy to make, and packed with protein and fiber. This recipe is from "Clueless in the Kitchen" by Evelyn Raab. Ingredients
-
1-1/2 lb (750 g) lean ground pork
2 large onions, chopped
2 cloves garlic, squished
1 28-oz (796 mL) can tomatoes
2 tsp (10 mL) chili powder
1/2 tsp (2 mL) curry powder
2 tsp (10 mL) ground cumin
1 small fresh hot pepper, chopped OR
1/4 tsp (1 mL) cayenne pepper
2 tsp (10 mL) salt
2 19-oz (540 mL) cans red kidney beans, drained and rinsed
Directions
In a large skillet, cook the beef, stirring to break up the clumps, with the onions and garlic until the meat is no longer pink. Add the canned tomatoes (with all their juice) and the seasonings, and simmer for about 30 minutes, mashing the tomatoes with a wooden spoon to break them up. Add the beans and cook for another 30 minutes.
