Introduction

Number of Servings: 2

Ingredients

    1 Pepper - halved and cleaned
    1/2 cup Couscous (dry)
    2T shredded parmesan (or any cheese)
    1 Fillet of Salmon (abt. 2 servings)
    Any herbs to taste

    Oven to 400

Directions

Prepare Couscous according to package instructions and let sit.
Cook fish unil nearly done (should separate in middle, but not be dry)
Flake fish into Couscous and add Cheese, mix well with spoon of fork.
Spoon ingredients into peppers and place in oven for 30-40 minutes until cheese is melted and hot in middle.

Enjoy!

Notes: You can substitute any melting cheese for the parmesan and if you are especially concerned with calories or dairy, you can use dijon mustard instead. Basically anything that holds the Couscous together will work.
