Introduction

Ingredients

    2 Tbsp extra virgin olive oil
    1 large onion chopped
    6 boneless, skinless chicken breasts (1 3/4 lb)
    1 lg yellow pepper, chopped
    3 plum tomatoes, chopped
    2 tsp paprika
    salt & pepper to taste
    2 tsp corn starch
    1 cup reduced fat sour cream
    2 cups whole wheat egg noodles

Directions

Heat oil in a large skillet over medium heat. Add onion and cook for 4 minutes or until soft.
Add chicken to skillet. Cover and cook for 5 minutes
Stir in pepper, tomatoes and paprika.
Reduce heat to low and simmer, covered for 18 minutes.
Mix sour cream, corn starch, salt and pepper together in a small bowl.
Add to pan and cook, uncovered, for 5 minutes or until sauce is thickened.
Serve with egg noodles.
