Number of Servings: 8

    1 lb ground beef
    1 small onion chopped
    1 clove of garlic pressed
    1 6oz can tomato paste
    3/4 c water
    1 c cooked brown rice
2 c reduced fat cheddar cheese or mexican blend
    1 1/2 tsp oregano
    1 tsp garlic salt
    1 tbsp chili powder
    pinch of red pepper (optional)
    8 wheat tortillas
    8 oz salsa
    1 can enchilada sauce

Begin by cooking ground beef with the onion and garlic until no longer pink. Add tomato paste, water, cooked rice, 1.5 cups cheese, salsa and seasonings. Stir until thoroughly mixed. Cook over low heat until mixture thickens.

Meanwhile, spread 1/4 cup enchilada sauce in the bottom of 13 x 9 pan that has been coated with cooking spray. Spread approximately 1/2 cup meat mixture onto tortilla and roll. Place enchiladas seam side down into pan. Pour remaining sauce over enchiladas and top with .5 cup cheese. Bake at 350 degrees for 10- 20 min. Makes 8 enchiladas.
We like to top them with lettuce, tomato, green onions and cilantro for an authentic look and taste. Also a tbsp of low fat sour cream and extra salsa if you like.
