Quick and easy chicken dish Quick and easy chicken dish

    1 whole chicken
    1 cup fresh mushrooms, sliced
    4 cloves of garlic, minced
    Water (enough to cover the chicken in a large pot)
    1 can sodium free, fat free chicken broth
    1.5 cups frozen carrots
    1.5 cups frozen peas
    1 tablespoon freeze dried basil
    2 tablespoons freeze dried poulty seasoning
    1 tsp ground black pepper
    Salt (add to taste or wait to let diners add salt as needed)
    4-5 heaping tablespoons of flour
    4 tablespoons of canola or olive oil
    1 small onion, large dice


Add whole chicken to large stockpot and cover with water. Bring to a boil, then turn heat down to simmer for 45 minutes. Remove chicken to cool and reserve half the liquid. Remove skin, bones and visible fat from the chicken. Pull or cut the chicken to make bite sized pieces. This step may be completed a day ahead of time, if so refrigerate chicken and broth.

Using a dutch oven, add the oil and heat til hot, then add the musrooms over medium heat. When they begin to soften, add the minced garlic and onion. Stir for 3-4 minutes, then add the flour and stir to make a rue. Let cook on medium high heat for 2-3 minutes, then add the reserved broth from cooking the chicken. Turn heat to high and continue to stir. If the contents become too thick, add chicken broth til it becomes the right consistency. Add the carrots and peas and cook til the dish becomes hot again, then add the chicken. Let simmer a few minutes, then add the spices and stir. Once it is bubbling, turn down to simmer, cover and let simmer for 10 minutes.

Serve over mashed potatoes or noodles.

Accomodations may be made to use whole wheat noodles, fresh herbs or dry herbs.
