Introduction

This is a reduced fat recipe of one of my families favorites. though it still packs a punch in flavor. if you wanted to further limit fat change to chicken it tastes great too. it should cut calories too. Ingredients

    Sauce
    2 medium onions chopped
    1/4 cup chili powder
    3 cups tomato sauce
    3 small cloves garlic minced
    3/4 t oregano
    3/4 t ground cumin
    1 1/2 t salt
    2 T sugar
    2 T cocoa powder do not omit

    Filling
    1 pound ground beef browned and drained
    1 large onion chopped
    3 cups refried beans.
    1 t salt
    1 clove garlic
    1/3 cup hot taco sauce

    24 corn tortillas
    3 cups sharp cheddar cheese grated

Directions

Sauce Directions;
Spray pan with non stick spray and saute onion on low heat till limp. add chili powder cook for 1 min . add remaining ingredients and bring to a boil simmer for 20 min. set aside

Filling directions;
saute beef and onion till brown and drain stir in beans salt garlic and taco sauce. set alside

Wam torlillas in a pan using only non stick spray do not fry.

Assemble in a 9x13 pan. Pour a layer of sauce in bottom of nonstick sprayed baking dish. Fill each tortilla with bean mixture roll and set in pan seam side down. Pour remain sauce over all tortillas top with cheese bake in a 350 degree oven for only 15 min.
