Introduction

This is a very tasty breakfast casserole that is low in calories and fat! This is a very tasty breakfast casserole that is low in calories and fat!
Number of Servings: 12

Ingredients

    2 cups Ore Ida shredded potatoes
    2 cups shredded cheddar cheese (2% lowfat)
    1 cup Heart Smart Bisquick mix
    1/2 tsp salt
    1/2 tsp pepper
    2 cups nonfat milk
    1 cup egg beaters

Directions

Preheat oven to 400 degrees. Spray the bottom of a 9" x 13" pan, and evenly arrange the potatoes and cheese in the pan. In a separate bowl, beat the Bisquick, salt, pepper, milk and egg beaters, until smooth. Pour mixture over potatoes and cheese. Bake at 400 degrees for +/- 30 minutes, or until lightly browned.
