    4 T olive oil (divided)
    1 lg eggplant (peeled and diced)
    1 med onion (diced)
    8 ounce can of sliced mushrooms
    1 t minced garlic
    1/4 t salt (opt)
    1/2 t pepper
    1 t Italian seasoning
    1 cup chicken broth (low sodium)
    1 cup 2 % milk
    1 can cream of mushroom soup
    2 cups long grain brown rice
    6 - 8 oz skinless boneless chicken (cubed)_


Put 2 T of olive oil in sauce pan and heat, add diced eggplant and saute for about 5 minutes til tender.

In a large "soup" pot put the other 2 T of olive oil and ad minced garlic, onion, mushrooms and chicken.
Also add to the chicken pot the salt, pepper and Italian seasoning. stir
When the chicken is mostly cooked add the broth, milk, mushroom soup and rice. Also add the eggplant.

Stir. put the lid on and simmer 15-30 minutes

Stir occasionally. feeds 4 to 6
