Introduction

My mom remembers having these on the farm when she was a child made with beef, turkey, or chicken broth. She says no words can describe the taste. and at Christmas time her mom would make the noodles and thicken the broth for them to put over mashed potatoes. This is easy to make. Ingredients

    3 chicken quarters
    4 eggs
    4 half shells of water
    pinch of salt
    shifted flour

Directions

Boil chicken in large pot of water to make broth. Add diced onion and galic. (Season with parsley, black pepper and other seasoning to your liking.) cook til chicken is done, remove chicken and let cool. Debone and deskin the ckicken and hold to add after dumplings are done cooking.

Hand wisk eggs and water till blended, add salt.
Start adding flour till mix just about drops off fork.
Drop into hot boiling broth, dumplings will rise to top of pot stir occ.
Cook for 20-30 minutes. Done when dumplings or noodles are not sticky inside.

To make noodles same recipe above, when adding flour keep adding till forms ball, roll out on floured table, thin, cut in thin or thick stripes, let dry with teatowel over for a day, drop in hot boiling broth like dumplings.
