Introduction

Ingredients

    Cooking spray
    1 large egg
    2 large egg whites
    dash salt and pepper
    1/2 tsp. ground cumin
    1 Tbsp. minced onion
    1 Tbsp. chopped red pepper
    1 Tbsp. chopped scallions
    1 slice Tyson Canadian Bacon, diced
    2 Tbsp. shredded Monterey Jack cheese
    1 Tbsp. picante sauce or salsa

Directions

Coat a small skillet with cooking spray, and preheat over medium-low heat.

Whisk together whole egg, egg whites, salt, pepper, and cumin until well combined and airy. Mix in onion, pepper, scallion, and Canadian bacon. Pour mixture in skillet, and let cook over medium-low heat until egg has set and nearly no liquid remains on top. Sprinkle cheese on one half of the omelette, and fold over to create a half moon shape. Cook for one minute longer.

Serve hot with picante drizzled over top.
