Introduction

Ingredients

    Chicken breast, cut into chunks
    Marinade:
    4 tbsp soy sauce
    2 tbsp light brown sugar (or light muscavado sugar) - must be SOFT.
    1 clove crushed garlic
    1 tbsp Lemon/Lime juice

    If making skewers, vegetables such as pepper or onion could be easily added, just brush with marinade and roast on skewers with chicken!

Directions

Preheat the oven to medium/high temperature.
Cut chicken breast into bitesize chunks, keep separate from other ingredients.
Mix soy sauce and sugar in a small saucepan. Gently heat on the hob until all sugar has dissolved. Then add the garlic and the lemon/lime juice and mix well. Now turn the heat off and add the chicken. Leave to marinate in the mixture for about an 40 minutes to an hour, ideally more. The heat left in the mixture and from the oven should cause the chicken to parially cook, BUT this does not mean it's ready!
Once chicken is done marinating, pour entire mixture (chicken and marinade) onto a deep baking tray and place in oven.
Every five minutes or so, stir everything around and turn the chicken pieces. You can also do this on skewers, but soak them first if they are wooden so they don't scorch!
Once chicken is cooked through, pour away excess marinade and serve or store!

This recipe described comes from one quite large chicken breast. The nutritional analysis includes ALL the ingredients, including those in the marinade, which you won't be eating! So don't be discouraged if the calorie count seems high.
