Hearty vegetarian chili. Hearty vegetarian chili.

    1 15.5 oz. can Black Beans
    1 15.5 oz. can Pinto Beans
    1 15.5 oz. can White Beans
    2 large cans crushed Tomatoes
    5 cloves Garlic, minced
    1 cup chopped Onion
    6 tbsp. Chili powder
    2 tbsp. cumin powder
    2 cups frozen Corn, Frozen
    1 tbsp. Olive Oil


Chop onion (1 large or 2 medium) and garlic. Add olive oil to large pot on medium heat, and then add onion and garlic. When translucent, add tomatoes and all beans (can include liquid or not). Add chili powder and cumin powder. Cook over medium heat until bubbling, stirring occasionally. Then add corn. Turn heat down to simmer and cook for at least another hour and a half, stirring occasionally.

Serve alone or with rice.
