    1.5 lb Beef chuck
    2 clove Garlic
    2 lbs Red Potato
    2 medium Onions, cubed
    2 tbsp Butter, unsalted
    2 tbsp Vinegar
    3 cup Beef stock
    1 14 oz can Petite Cut Diced Tomatoes
    2 tbsp Fresh Chives, chopped
    2 tbsp Paprika
    Egg Noodles - cooked (1 cup uncooked)


Cut the beef into bite-sized cubes. Peel and finely chop garlic. Mix meat with salt, pepper, garlic, and 1 tbsp of ground paprika. Peel, wash potatoes and cut into bite sized pieces. In a large pan, heat butter and sear meat on all sides over high heat. Add onions and saute until softened. Sprinkle with remaining paprika and add vinegar,stock, tomatoes, and potatoes.

Simmer over low heat for about 1 hour. Serve in bowls with a dollop of sour cream topped with chopped chives.
Serves 4 - 6.
