Number of Servings: 4


    for the dough:
    1 cup flour (all-purpose)
    3 tablespoons sugar
    1 teaspoon baking powder
    1/2 teaspoon baking soda
    1/8 teaspoon salt
    1/2 cup low-fat buttermilk
    1 bablespoon liquid butter (Butter Buds)
    1 tablespoon canola oil
    Fruit mixture:
    2 pints of your favorite fruit
    1/2 cup sugar
    4 teaspoons lemon juice
    1/2 teaspoon ground cinnamon mixed with 1 tablespoon sugar


for dough:
Mix flour 3 table spoons sugar, baking powder, baking soda, and salt in large bowl. In smaller bowl, mix buttermilk, liquid butter and oil. Make a well in the center of the flour mixture and add the buttermilk mixture. Mix until combined then set aside.
For Fruit mixture:
In a heavy skillet, combine the fruit, sugar and lemon juice with 1/4 cup water. Toss gently, cover and bring to boil. Reduce heat to low; remove cover. drop dumpling batter by spoonfuls evenly over the simmering fruit.
Sprinkle with the cinnamon sugar mixture. Cover pan tightly with lid or foil; cook for 15 to 17 minutes or until dumplings are firm to the touch.

Serve hot with fat-free frozen yogurt or whipped cream. (not calulated into nutritional info).
