Directions
Heat olive oil in pan (heat medium) and put the pork chops in the pan. Add salt and pepper.
When the pork starts browning, add onion into the pan and fry for about 5 minutes. Add some water (so onion doesn't burn) and mix in mustard.
Cover and simmer until pork is cooked through and water is almost gone (some left over is good over the rice). Serve with rice, serving onion over the pork and rice.
*hint: good with lots of pepper
