Introduction

This is a delicious fat-free alternative to traditional ice cream. Traditional ice cream is laden with calories and fat. My makeover recipe replaces the half-and-half, heavy cream and egg yolks with skim milk, gelatin and water resulting in a light and delicious dessert. VERY LOW IN CALORIES AND FAT FREE!!!! Ingredients

    3 tsp unflavored gelatin (such as Knox gelatin)

    3 cup skim milk

    6 Tbsp sugar

    3 tsp vanilla extract

    3 Tbsp water

Directions

makes 20 1/3 cup servings

Mix gelatin with boiling water and stir until it dissolves. Dissolve sugar in skim milk over a medium heat without letting the mixture boil. Remove from the heat and add the gelatin mixture. Stir in vanilla.

Pour into a shallow container and freeze until the mixture has set but not frozen solid. Mix with an electric beater until the mixture is white and fluffy. It should be at least double it's original volume. Freeze until solid.

Variations:
If a larger recipe serving is desired, divide it into eight 1/2 cup servings.

For a fruity flavor try adding fresh fruit when you beat the mixture. Or, for an occasional treat, serve on low-calorie cake, pie or a low-fat brownie topped with chocolate sauce.
