Introduction

I love biscuits and gravy. It's my favorite, but it always left me with way too many calories and feeling heavy and bloated. This is a recipe to replace that. Inspired by Eggs in Purgatory found in Food Network magazine. This has been adapted to suit my needs. I love biscuits and gravy. It's my favorite, but it always left me with way too many calories and feeling heavy and bloated. This is a recipe to replace that. Inspired by Eggs in Purgatory found in Food Network magazine. Ingredients

    1 egg
    1 egg white
    1/2 c. pasta sauce
    1/3 c. water

Directions

Add pasta sauce and water to a small sauce pan. Let come to a simmer and add egg and egg white. Top with lid and poach egg in the pasta sauce until white is set.

Can serve over choice of toast, biscuit, etc.
