    1tsp extra virgin olive oil
    1 onion, chopped
    1 celery stalk, chopped
    1tsp ground coriander
    1/2 courgette sliced
    2 fresh tomatoes
    350g frozen sweetcorn
    750ml vegetable stock
    2 tsp soy sauce
    1 small handful of coriander
    black pepper


heat oil, add onion and celery, cover and sweat gently for 6 to 7 minutes until onion softened.

add ground coriander, courgette and tomatoes. sweat for 5mins.

add sweet corn, stock and soy sauce. simmer for 20 minutes.

add chopped coriander and black pepper, cook for another 2 to 3 minutes.

leave to coof for a few minutes, then blend to a creamy texture.
