This is a great recipie! Fat is reduced but flavor and texture don't suffer! This is a great recipie! Fat is reduced but flavor and texture don't suffer!
Number of Servings: 12


    2 large Eggs
    3/4 C Sugar
    2 Bananas - very ripe and mashed
    1/4 C Applesauce
    1 Tbsp Canola Oil
    1 Tsp Vanilla Extract
    1 3/4 C Flour
    2 Tsp Baking Powder
    1/2 Tsp Baking Soda
    1/2 Tsp Salt


Preheat oven to 350
Beat Eggs and Sugar with hand mixer for 5 mins. - This step makes the whole thing worth it!
Add mashed Bananas (a ricer works great), Applesauce, Oil and Vanilla. Blend.
Slowly add dry igredients. When thoroughly mixed place in a greased and floured/sugared loaf pan. Bake at 350 for 1 hour or until toothpick comes out clean from middle of loaf
