Ingredients

    2 sweet potatoes
    1 tsp extra virgin olive oil
    1 small onion, finely chopped
    1 tsp cumin seeds
    1 tsp ground coriander
    1/4 tsp chilli powder (optional)
    8 button mushrooms, finely chopped
    1tbsp soy sauce (or to taste)
    1 tsp oregano
    1 tbsp sesame seeds

Directions

preheat oven to 190C/375F/gas mark 5

bake potatoes whole until soft (40 to 50 mins)
fry onion in the olive oil for 5mins
add cumin, coriander, chilli and mushrooms and fry for another 5mins
add soy sauce and oregano, remove from the heat

cut each potato in half lenghtways and scoop out the flesh. Add flesh to the onion mixture and mash together, adding more soya sauce if you like.

Place potato skins on a baking tray and fill with the onion mixture. Sprinkle with sesame seeds. Bake in the centre of the oven for 20mins.
