Ingredients

    1/2 lb pork/beef sausage
    12 eggs
    1/2 shredded cheddar cheese
    1/2 cup chopped onion
    3/4 cup chopped green pepper
    1/2 teaspoon salt
    1/4 teaspoon pepper
    1/4 teaspoon garlic powder
    (or used packaged tex-mex spice)

Directions

Set oven to 350 degree and while heating cook sausage and drain (use turkey sausage for a lower fat/calorie version) . Shred cheese. Beat eggs and add remaining ingredients to it.

Fill muffin tin (sprayed with Pam) and bake for 20 minutes. Also can be made in mini muffin tins.
There is a lower cholestrol version if you search for "scrambled egg muffins" that uses just egg whites. Leaving out the cheese saves 20 calories a muffin.
