Ingredients

2 chicken breast roasted in oven and then shredded
3 carrots chopped
3 stalks of celery chopped
6 cupschicken broth 99% fat free(may use water to make up difference)
1 can cannelini or small white beans(rinsed)
1/2 cup spinach chopped
1 tbsp fresh rosemary chopped
2 tbsp fresh parsley chopped
1 hard rind of parmesan cheese
1 clove of garlic bruised
Directions
Roast chicken in 350 degree oven for 30 mins. Allow to cool and then shred.
heat chicken stock over med-high heat
add celery and carrots and cook until tender, about 10 mins.
add shredded chicken, cannelini beans, parsley, rosemary, bruised garlic clove and parmesan cheese rind. Continue to heat 30 mins until flavors blend. Add chopped spinach and remove clove of garlic and cheese rind before serving.
