Number of Servings: 4


    One 2- to 3-pound farm-raised chicken
    Kosher salt and freshly ground black pepper
    Garlic powder (2 TBSP each)


Preheat oven to 450 F

Completely dry chicken inside and out with a paper towel.

Truss chicken.

Cover with kosher salt, garlic powder and ground pepper.

Place on an oven safe saute pan, and place in oven. Rotate once halfway through cooking.

Roast approximately 1 hour.

Let cool for 10-15 minutes before serving.
