    550g (1lb 5oz) potatoes, diced
    2 tsp extra virgin olive oil
    1 small onion, finely chopped
    1/2 tsp groud black pepper
    1/2 tsp ground coriander
    400g can butter beans
    1/2 tsp salt
    2 tbsp chopped coriander


Boil potatoes until tender
Gently fry onion until soft, but not brown, for about 4-5 mins. add pepper and coriander powder
Place beans, potatoes and onion in a bowl, mash together. Form mixture into cakes.

Either bake in the oven, around 200C approx 20mins (or until golden)
or Fry in a fryinf pan, 3-4 minutes each side until crisp and golden (use 1 tbsp olive oil - not included in calorie calculation)
