Introduction

Ingredients

    16 oz plain club soda - cold
    2 cups of ice
    1 lemon
    3 olives

Directions

1) Peel 3 long strips of lemon zest from the lemon then cut the lemon into 4 wedges.
2) Remove pimientos or pits from olives & stuff
with the strips of lemon zest.

Make ahead tip: I usually prepare 2 jars of olives with lemon rind at a time & keep them in the fridge for a moments notice. 1 jar to serve and 1 to go (I always end up giving one away!) I will sometimes add a little extra lemon juice and or vodka into the brine & let the flavors blend. The longer they sit, the more lemony they become.

Just before serving:
3) Pour the club soda into the ice & stir until chilled. When you can no longer handle the container without frost-bite - it's cold enough.
4) Strain the club soda into your glass.
5) Squeeze 1 lemon wedge into the soda.
6) Drop the 3 lemon-stuffed olives into your drink and enjoy.

Note: if you like dirty martini's you can add a little of the olive brine into your drink. but don't forget to adjust the calories.
