    1 cup cornmeal
    2 cups water
    1 tbs canola oil
    1 cup eggplant chopped
    1 cup zucchini chopped
    1 cup onion chopped
    1 cup mushrooms chopped
    1/4 cup tomatoe sauce
    1 tsp garlic
    1 tbs parmesan cheese
    1 tbs italian seasoning


Prepare the polenta per package directions using only water. Saute all the vegetables in 1 tbs of canola oil until softened. Add the sauce and seasoning and cook for 10 minutes. Serve over polenta with parmesan cheese.
