A simple, delicious, one pot dish!! A simple, delicious, one pot dish!!
Number of Servings: 2


    2 cups prepared couscous
    1/4-1/2 cup copped onion (depending on how much you like it)
    1 large zucchini, quartered and sliced
    1 can diced tomatoes
    3 tbsp parmesan cheese
    salt and pepper to taste


Saute onions for 5 minutes. Add zucchini for another 5 minutes. Add tomatoes. When heated through stir veggies into couscous. Season with salt and pepper. Sprinkle with cheese. So yummy!!
