    1 tsp olive oil
    1 (2 lb) boneless chuck roast
    1/2 tbsp salt
    1/2 tbsp black pepper
    1 cup coarsely chopped onion
    1 cup low salt beef broth
    1 1/2 tbsp ketchup
    1 tbsp Worcestershire sauce
    1/2 cup diced tomato
    2 cups chopped potatoes
    2 cups sliced carrots
    1 tbsp lemon juice


Preheat oven to 300*
Heat oil in a large Dutch oven over medium-high heat. Sprinkle roast with salt and pepper. Add roast to pan, browning on all sides (about 8 minutes). Remove from pan. Add onions to pan, and saute 8 minutes or until browned. Return roast to pan. Combine broth, ketchup, and Worcestershire sauce; pour broth mixture over roast. Add tomato and bring to a simmer.
Cover and baked at 300* for 2 1/2 hrs or until tender. Add potatoes and carrots; cover and bake and additional 30 minutes or until vegetables are tender. Stir in lemon juice. Garnish with parsley if desired. Yield: 5 servings
