Ingredients

    2 - 3 Tbsp. flour
    2 Tbsp. canola oil
    2.5 lbs. stew beef
    6 cups beef broth
    1 cup merlot (or any red wine)
    2 lg. onions, chopped coarse
    4 lg. carrots, sliced thick
    1/2 bunch celery, including leaves (about 4 cups)
    1 lg. bay leaf
    1 10-oz. bag frozen peas
    15 small red potatoes, quartered

Directions

heat oil in large pot.
toss beef in flour (I close it in a ziploc bag and shake), heat in oil till browned on the outsides.
add broth, salt, pepper, bay leaf and wine, simmer on med. low for 2 hours min.
Add veggies (except peas), simmer 30 minutes longer.
Add peas, cook for 20 minutes longer.
serve.
