BULK recipe for tomato sauce that has a veggie of all the colors and then some but that even kids and non veggie people will eat. works great in all things you would a prepared tomato sauce for and freezes well. Ingredients

    7 cloves of garlic
    1/2 t of butter
    3 medium zucchini
    2 medium summer squash
    5 medium carrots
    1/2 fresh eggplant
    large can of diced tomatoes
    64 oz bottle of tomato juice
    4 oz baby portabella mushrooms
    2.5 oz fresh spinach
    2 large & 1 small can of tomato sauce
    1 large can of crushed tomatoes
    1 can tomato paste
    1 large can pureed tomato
    1 T of garlic powder
    1/2 cup sugar
    italian seasoning (to taste)
    salt & pepper (to taste)


Directions

Chop garlic and saute in melted butter
add to large pot
Rough chop all veggies
add to pot
add diced tomatoes
add tomato juice
cover and place over medium low heat
cook until tender stirring occasionally
puree until smooth
add sauce, paste, puree and crushed tomatoes
stir in throughly
add sugar and spices
heat over low heat for 8 - 10 hours

makes 52 1/2 cup servings
