    2 pkts (1.5oz each) enchilada sauce mix
    3 cups water
    12 oz can tomato paste

    2 lbs lean ground beef
    6 flour tortillas
    15 oz can of re fried beans
    2 cups shredded cheddar cheese


Mix the water, enchilada sauce mix and tomato paste in a pan and simmer for 15 minutes. Brown and rinse the ground beef. Mix 1/3 of the sauce with the browned meat. spread 1/3 of the sauce on the bottom of a greased 9x13 pan. Tear to fit 2 tortilla shells and place on top of the sauce. Spoon 1/2 of the meat over the tortillas and sprinkle with 1/3 of the cheese. Tear to fit 2 more shells then layer the refried beans and remaining meat. Sprinkle with another 1/3 of the cheese. Cover with the remaining 2 shells, tearing to fit. Top with remaining sauce and cheese. Bake uncovered for 35 minutes at 350. Makes 12 servings.

This is good served with black olives, sour cream, guacamole and taco sauce. (These not included with nutritional info).
