Introduction

This is a great low fat dish with a lot of flavor. I prefer to eat it served over rice. It is quick, easy and doesn't require a lot of ingredients. The traditional version I was accostomed to was prepared with chicken thighs (with bone and skin) so I thought this was a lower calorie option. This is a great low fat dish with a lot of flavor. Ingredients

    1 pound skinless, boneless chicken breast
    1/2 cup low sodium soy sauce
    1/2 cup white vinegar
    1/2 tablespoon peppercorns
    2 bay leaves
    2 cloves of garlic, through the garlic press or finely chopped

Directions

Makes three servings

Chop chicken in to bite sized pieces.

Add all ingredients and simmer in a covered pot until chicken is cooked through, stirring occasionally.

Serve chicken over rice and use sauce.
