Introduction

Simple and easy, this recipe is high in protein and fits in with my diabetic/no refined white diet. The cholesterol can be cut by using an egg substitute. I use a fruit only jam for the topping. I make the whole recipe and use the leftovers for breakfast the next day. Simple and easy, this recipe is high in protein and fits in with my diabetic/no refined white diet. Ingredients

    1 cup ricotta cheese
    4 eggs
    2/3 cup flour

Directions

10 5-inch pancakes. Mix cheese and eggs well. Add flour and mix again. Spray griddle with no-calorie spray. Heat griddle to medium heat. Carefully spoon by tablespoon into the pan. (I use a gravy ladle.) Fry on one side until pancakes bubble. Turn and fry on other side until brown. Can sprinkle with cinnamon. Serve warm.
