Ingredients

9 uncooked lasagna noodles
20 oz. sweet Italian turkey sausage, casings removed
8 oz. 90% lean ground beef
1 large onion, chopped
4 cloves garlic, minced
28 oz. canned diced tomatoes, with juice
12 oz. tomato paste
1/4 cup water
1 tsp dried basil
1/2 tsp fennel seed
1/4 tsp black pepper (or to taste)
1 large egg, lightly beaten
15 oz. part-skim ricotta cheese
1 tbsp parsley, minced
1/2 tsp kosher salt
2 cups part-skim mozzarella cheese, shredded
2 oz. parmesan cheese, grated or shredded
Directions
Cook noodles according to package directions. Meanwhile, in a Dutch oven, cook the sausage, beef, onion, and garlic over medium heat until meat is no longer pink; drain.
Stir in the tomatoes, tomato paste, water, sugar, basil, fennel seed, and pepper. Bring to a boil. Reduce heat; cover and simmer for 15-20 minutes, stirring occasionally.
In a small bowl, combine the egg, ricotta, parsley, and salt. Drain the noodles and rinse in cold water. Spread 1 cup meat sauce in a 13"x9" baking dish coated in cooking spray. Top with three noodles, 2 cups meat sauce, 2/3 cup ricotta mixture, 2/3 cup mozzarella, and 1/4 cup parmesan. Repeat layers twice.
Cover and bake at 375 degrees for 40 minutes. Uncover; bake 10-15 minutes longer. Let stand for 10 minutes before cutting. Serves 12.
