    *Whole Wheat Flour, 1 cup
    Granulated Sugar, 2 tsp
    Baking Powder, 2 tsp
    Egg, fresh, 1 large
    Milk, 2%, 1 cup
    Applesauce, unsweetened, 2 tbsp
    Blueberries, fresh, .5 cup
    Pecans, .25 cup, chopped


combine flour, sugar and baking powder in med bowl. set aside.

in seperate med bowl, beat egg. add milk and applesauce, beat with fork/whisk until well blended. Add to flour mixture and beat until almost smooth, add blueberries and pecans.

Cook on griddle or stove top on med heat. pour approx 1/4 cup batter per pancake, and flip when surface is bubbly and edges are dry. cook until bottoms are golden brown.

makes about 9 pancakes, 3 per serving.
