Introduction

I got the basic recipe from when I was doing Suzanne Somers and have adjusted it here and there. It's one of my family's favorites and is great to have as a quick breakfast, lunch or dinner. We make minis for the kids and regular sized ones for us. Great with salsa and lite sour cream. I got the basic recipe from when I was doing Suzanne Somers and have adjusted it here and there. Ingredients

    -12 eggs (I used Eggland's Best
    -4 T Hormel 50% less fat bacon bits
    -1/4 c diced onions
    -1/4 c diced green bell peppers
    -1/4 c diced canned drained mushrooms
    -1 t minced garlic
    -1/4 t salt
    -1/4 t black pepper
    -1 C low fat shredded cheese (I used Kraft 2% Mexican Four cheese)

Directions

Mix all the ingredients in a med- large mixing bowl and measure out into mini or regular muffin tins (sprayed lightly). The spray will add a small amount of calories depending on what spray you use and how much you use.

I use my #50 scooper and put 3 scoops in a regular muffin tin and one in the minis.

Bake at 350 degrees for 20-25 minutes checking the minis at about 15 minutes. Doneness can be checked with a knife in the center coming out clean. They will puff up. Great with salsa and/or sour cream(not in the nutritional information)

Makes 14 servings of 3 minis each or 1 regular.
