Introduction

A delicious spicy mac and cheese. Sometimes, I add other vegetables, depending on what i have around the fridge. A delicious spicy mac and cheese. Sometimes, I add other vegetables, depending on what i have around the fridge.

Ingredients

    1 tsp. olive oil
    2 green chilis, chopped
    1 small onion, chopped
    1 green bell pepper, chopped
    2 jalapenos, chopped
    cumin
    garlic salt
    chili powder
    3.5 c. skim milk
    8 oz. rotini
    1c. bread crumbs
    1 tbsp. butter
    2 c. cheddar cheese

Directions

In a large pan, saute peppers, onions, green chilis and jalapenos in olive oil. Add spices. Pour in milk and macaroni. Cook until macaroni is al dente. Add cheese and stir until melted. Pour into baking dish and cover with bread crumbs mixed with milk. Put in oven for 20 minutes at 350 degrees or until crust turns golden brown.
