    one butternut squash about 1.5 pounds after cleaned
    one large apple , cored
    one leek
    1 quart chicken broth
    3 cloves garlic, chopped
    1Tbsp unsalted butter
    1/2 tsp curry powder
    1/2 tsp cinnamon
    1Tbsp balsamic vinegar


wash and take out seeds from 1.5 lb squash. Core 1 large apple . Steam in 1/2 cup water in covered sauce pan for 10 minutes. Peel squash and cut into small pieces. Chop and add leeks and garlic. Add all other ingredients and simmer for 1 hour. Put through blender. Put back into sauce pan and season to taste with salt and pepper or Tony Chachere's original creole seasoning. Makes four 1.5 cup servings.( may add 1 tbsp of nonfat plain yogurt to each bowl right before serving.) Remember to add extra values if you do!
