    4 boneless skinless chicken breast, (6-8 oz)
    1/4 C Light Mayonnaise
    1/4 C skim molk
    1 TB Dijon Mustard,
    1TB Lemon Juice,
    2 Celery stalks, finely chopped
    1/2 small onion
    1/4 C Parsley


Bring 1 inch salted water to boil in a large skillet witha tight fitting lid. Add chicken and cover. Reduce heat to medium low. Simmer 5 minutes. Off heat, let chicken (still covered) steam until cooked through, 12-14 minutes. Remove from skillet and let cool . When cool enought to handle, cut into chunks or shred with 2 forks.

In medium bowl stir together mayo, milk, mustard, and lemon juice. Stir in chicken, celery, onion and parsley. Season with salt and pepper.

Serve on bread or over greens. (To store, refrigerate up to 3 days.)
