Introduction

Ingredients

    1 - 19 oz can of Black Beans rinsed and drained
    1 - mango, peeled, pitted and diced
    1 - sweet red pepper diced
    2 - green onions or scalliions sliced
    1/4 c - fresh lime juice
    2 Tbsp - vegetable or olive oil
    1 Tbsp - soy sauce
    1/2 tsp - red pepper flakes
    2 tbsp - chopped fresh cilantro

Directions

In a medium bowl, combine beans, mango, sweet red pepper, and green onions.
Whisk together lime juice, vegetable oil, soy sauce and red pepper flakes.
Add cilantro and todd lightly.

Makes 4-6 servings
