Introduction

Number of Servings: 4

Ingredients

    2 c. chicken broth (or bouillion)
    16 oz. frozen cauliflower florets
    1 c. celery, diced
    1 c. carrots, chopped
    1 small onion, chopped
    1/2 t. thyme
    salt & pepper, to taste
    1 c. milk
    6 oz. reduced-fat Velveeta cheese

Directions

Put all ingredients except milk and cheese into a large stockpot or soup kettle and simmer until veggies are tender, approx. 45 min.

Use potato masher and mash veggies to the consistency desired. (You can get a creamier soup if you pour it into a blender or food processor.)

After mashing, stir in milk and cheese. Heat over medium heat, stirring constantly, until cheese is melted and mixture is hot.

Serve with a big green salad and whole grain rolls for a nice supper.
