Introduction

Delicious date filling and crumbly topping. Wonderful for care packages. (This recipe came out of the Taste of Home 2009 cookbook. Was submitted by Suzanne Caithamer, Cincinnati, OH.) Original recipe calls for a full cup of butter in the topping ingredients. I made it with half the butter. Original recipe used all sugar. I substituted it with half Splenda. Ingredients

    1 pound pitted whole dates
    1/3 c. packed brown sugar
    1/3 c. Splenda
    2/3 c. orange juice
    3 t. vanilla

    Crust:
    1 1/2 c. flour
    1 1/2 c. oats
    1/2 c. packed brown sugar
    1/2 c. Splenda
    1 t. ground cinnamon
    1/2 t. baking soda
    Dash salt
    1/2 c. cold butter
    3/4 c. coarsely chopped walnuts
    Vanilla ice cream, optional

Directions

In a small saucepan, combine the dates, brown sugar and orange juice. Bring to a boil. Reduce heat; simmer, uncovered, for 3-4 minutes or until thickened and dates are tender, stirring constantly. Remove from heat; stir in vanilla.

In a large bowl, combine the flour, oats, brown sugar, cinnamon, baking soda and salt. Cut in the butter until crumbly. Press half into a greased 13x9x2 baking dish. Carefully spread with date mixture.

Stir walnuts into remaining crumb mixture. Sprinkle over the filling; press down gently. Bake at 350 for 25 to 30 min. or until lightly browned. Cool on a wire rack. Cut into squares and serve with ice cream if desired. Yield: 2 dozen
