Introduction
I found this recipe in a magazine and lightened it up a bit, using chicken broth instead of wine, 98% lean ground beef and I added frozen peas for a little color. It was a hit. Ingredients

2 T. olive oil
1 c. onion, chopped
1 carrot, chopped
1 c. sliced mushrooms
1 garlic clove, minced
1 tsp. Italian seasoning
1/2 lb. ground beef (lean)
1/2 c. chicken broth, fat free
1 jar (24 oz.) marinara sauce
3 T. parsley
Directions
Heat oil in a large skillet. Add onion, carrot, mushrooms, garlic, and seasoning. Cook, stirring occasionally, until tender, 10-12 minutes. Crumble in beef; cook stirring occasionally, until browned, approx. 7 minutes. Stir in chicken broth, bring to a boil; cook 1 minute. Stir in marinara sauce and 1/2 c. pasta water (reserved from pasta you will cook) . Reduce heat, cover and simmer about 15 minutes. Serve over pasta, sprinkled with parsley and grated Parmesan cheese.
