Introduction

Ingredients

    I box (2cups) orzo or cous cous, prepared
    1 lemon, jucied and zested
    3 extra virgin olive oil
    1 small red onion
    2 large peppers (i use red and orange)
    1 cup finely chooped parsley

Directions

Prepare pasta by box directions using i tablespoon oil. fluff with fork. mix juice, zest, and oil in a large bowl. dice onion and peppers in a 1/4 inch dice. combine everything together and add salt and pepper to taste. serves 10 side dish portions or 5 main salad portions.
